    **BRAD** Since I became 100% plant based, I appreciate fermenting SO MUCH! It's added a flavor profile to my diet that I was missing without dairy. Can you give a nod to tofu sometime? I'd like to try to marinate and cure it but I'm kinda nervous. Thank you for so much great content!!

    Go, classic 🇸🇪 "Gravad lax" 1kg salmon 4 tbsp salt (non kosher, not standard I Sweden) 4 tbsp sugar 2 tesp white pepper, crushed 1 dl dill Mix, spread out on the salmon and wait 2 days in the fridge, done. Easy

    Fun fact, gravadlax means "graved salmon" because it's, traditionally, buried in the ground or under sand to stay cool and under weight while it cures.
